I've gone back to the list view option - so ignore the last post above. I followed the instructions on this page http://docs.shopplugin.net/List_View_Only_in_Categories to originally try and get all my pages to display products in list view, but this is what was causing everything to be displayed as a grid - so I went back to the original CSS and I've got all my products now displaying as a list now on all my pages.

I want my products to always be displayed in list view - on the homepage and within categories, so I followed the instructions here:

And this works fine for the homepage, but not in categories where all my products are shoen in the grid view.
Am I missing something?

I've tried adding padding/margin to so many of the styles within the stylesheet and had no luck what-so-ever. Do I need to create a new style?
